After a long winter of subsisting on provisions gathered from the fields, nothing beats a touch of maple syrup in the menu to celebrate spring. Back then, it was with the help of family and friends that everyone busied themselves with collecting sap, which was then followed by a hearty meal.
On the menu, to feed all the helpers, you’d find whatever remained from the winter stores. Among other dishes were pea soup, marinated autumn vegetables, farm-fresh eggs, grilled bacon, ham, beans, and potatoes. The meal was simple but filled with authentic, comforting flavors! Meanwhile, by the wood stove, the freshly collected sap was boiled, filling the shack with its sweet, gentle aroma.
After the meal, the children played outside, eager to taste the maple taffy. These moments captured the very essence of life at the sugar bush. Folk music further animated the feast, with the violin and lively jig dances adding to the atmosphere. Everyone cherished these magical moments. And if the harvest had been good—for the delight of both the young and the old—the highlight of the meal was a little stick of maple taffy on the snow!
